Coastal honey comes from a mixture of our expansive natives including Bloodwood, Ironbark, tea tree, banksia, mangroves, melaleuca, callistemons and a whole array of flowering gums collected from our hives along the Northern NSW coastline.
The flavour varies from season to season depending on the weather and also each location will also change the colour and taste.
We do not heat our honey or pressure filter, we prefer to use a cold processing method, which is slower but does ensure our honey still contains all nutrients and we never mix batches.
All pure honey encounters some candying or crystalisation over time, especially when there's banksia involved. This can depend on the weather, the natural fructose and glucose levels in the honey and also what the bees have been feasting on. It also is a good sign that the honey is pure and untainted or heated.
To soften any crystalised honey, simply place the container in a hot water bath or leave on a sunny window for a couple of days.
